This recipe makes perfect sense especially if you made the roasted brussels and potatoes the night before for dinner. It just makes life easy! But even if you are making the potatoes and brussel sprouts the morning of - no big deal. This recipe is easy and can be used in a variety of ways! You can add whatever sauces or dressings you like to it, and it will taste great. Turn it into a burrito if you want! Add some more of your favorite veggies! The beauty about this is you can really do whatever you want with it, and it will be tasty!

I always go for organic & local if possible! (One day I will have a flourishing garden and will be able to show others how to grow their own food too!) Look for the small variety of red/purple potatoes - they are great because they are perfect bite size! You can just toss em in the oven without having to cut them up. Just a little tip to save some time! (Every second counts - especially if you’re a busy working boss babe with a family to take care of on top of it all!)

Switch it up by adding any veggies you like. Explore the variety of phytonutrients in your area! It really makes a difference for your body when the food is from where you live, especially if it’s grown by your own hands, or hands you know.

See what your local farmers market is up to, check in with your local farmers. You may even find farmers who are delivering veggie boxes to your door or to a location near you! When we are eating for fuel and energy - quality matters most. When you start to explore the difference in quality of foods that you consume - pay attention. You may notice that you’re not as fatigued, tired, groggy… you may notice that your bowels are on a regular schedule… less tummy aches, less headaches, less cramps. Quality quality quality first and foremost. Know what you are consuming… and it will truly change your life & your bodies response to pain management/inflammation.
